Goetta, the less messy method

Ingredients

  • 8 cups water
  • 2 1/2 cups steel-cut oats
  • 3 tsp. salt
  • 1 pinch ground black pepper
  • 1 large onion, chopped
  • 2 bay leaves
  • 1 lb. ground beef
  • 1 lb. ground pork

sausage herbs

  • 2 tsp. dried sage
  • 2 tsp. kosher salt
  • 1 tsp. oregano
  • 1 tsp. ground black pepper
  • 1/4 tsp. marjoram
  • 2 tsp. fennel seeds ground
  • 1 Tbsp. light brown sugar
  • 1/8 tsp. crushed red pepper or to taste
  • pinch ground cloves

Instructions

  1. Bring the water to a boil in a large pot.

  2. Add the oats, salt and pepper and reduce heat to low so that it is at a simmer. Cover. Stir often to make sure the oats don't burn at the bottom. Cook for 1 to 2 hours (depends on the heat and the oats).

  3. Mix all the sausage herbs with the pork and beef.

  4. After the oats have cooked, mix in the meat, onions, and bay leaves and cook for another hour on low heat.

  5. Get a large baking sheet (about 12"x16" and 1" deep) and line it with parchment paper. Take out the bay leaves and pour the mixture into the pan and smooth it out so that it is relatively even. Let it cool completely and/or refrigerate.

  6. Slide the parchment paper and meat out of the baking sheet onto a cutting board. Slice into any size you wish. At this point you can fry the slices right away or wrap and freeze. If freezing, lay out the patties on a baking sheet so that it freezes flat.

  7. For frying, heat oil in a well-seasoned cast iron skillet over medium-high heat until the oil is shimmering. Place the patty on the oil (it should sizzle) and turn down the heat to medium-low. If it is a frozen patty, fry for 7 minutes. If not frozen, about 4 minutes. Then flip the patty to fry the other side. Again, 7 minutes if frozen, about 4 minutes if not.

  8. Serve with egg and toast or however you like!
