I’m always on the lookout for good curry recipes, and it feels like even within just the last few years, there are far more diverse and good recipes available online. Good news for home cooks like me, bad news for people trying to sell cookbooks…I guess?

I found this Chicken Tikka Masala recipe by Karina on Cafe Delites which not only had good reviews but the ingredients list looked pretty legit with no pre-made pastes or spice mixes. For the garam masala I used a homemade one which I made using the recipe from Veg Recipes of India.

As with most Indian recipes, there are loads of spices that go into it which you cannot do without. If you’ve never cooked Indian food, most likely you will have to put in the initial investment of gathering all the spices. This may be a hurdle, but thanks to the internet the hurdle has gotten much easier to overcome!

This recipe requires some prep such as marinating the chicken, chopping onions and garlic, and grating garlic and ginger. Of course you can buy garlic paste and ginger paste, but nothing beats freshly grated garlic and ginger. How do I grate garlic and ginger, you ask? I use one of those Japanese ceramic graters. I highly recommend it. Easy to use, easy to clean, and grates great! Sorry for the pun…

I would also recommend having all your spices and measuring spoons lined up especially in the onion frying stage so that you don’t burn it while searching around for the spices.

Anyway, I really don’t have much criticism for this recipe. Once you have all the ingredients ready to go, it is very straightforward. The taste is so delicious and addicting! I’m already dreaming about the next time I can eat this!
